As part of the FIJET Academy for Young Journalists, we had the opportunity to visit Tunisia. Located on the Mediterranean coast, Tunisia enchants its visitors with not only beautiful beaches and historic landmarks but also with the richness of flavors and aromas offered by its culinary scene. Tunisian cuisine represents an extraordinary fusion of Mediterranean and African culinary heritage, enriched with diverse flavors, scents, and spices. This unique cuisine reflects Tunisia's history and geographical location, situated on the northern coast of Africa, characterized by its simplicity in preparation, where many dishes reflect the authentic taste of traditional Tunisian cuisine. Tunisian cuisine is not just about food; it is an expression of a rich culture, hospitality, and a passion for spices, making it irresistible for all gastronomy enthusiasts.

 

Harisa – The Spicy Queen of Tunisian Cuisine

Harisa is a spicy blend that serves as a key ingredient in Tunisian and North African cuisine. This spice brings the distinctive spiciness and richness of flavor to many dishes. The fillets are often served with lime slices and fresh herbs to emphasize the freshness and simplicity of the dish. Tuna, as one of the primary catches in the Mediterranean Sea, plays a significant role in Tunisian cuisine. With its coastline along the Mediterranean, the Tunisian population has access to fresh and delectable tuna and has developed many ways to prepare this precious seafood. Tuna Salad (Salatet El Melah) is a popular appetizer in Tunisia. This straightforward yet flavorful salad is made by mixing canned tuna with lime juice, olive oil, onions, capers, and fresh parsley. It's often served on bread slices and is frequently spiced with harisa, giving it a mildly spicy kick. Brik with Tuna (Brik a la Tunisienne) are a type of pastry filled with various ingredients, and one popular variation in Tunisia is the brik with tuna. The pastry is stuffed with tuna, egg, and capers, then fried until golden brown. You can often find this dish as a street snack in Tunisian markets. Couscous, a well-known dish in Tunisia, is often enriched with various ingredients, including tuna. Tuna can be added to couscous to enhance the flavors and protein content. It is typically combined with vegetables, spices, and olive oil to achieve the perfect taste. Tuna is an essential ingredient in Tunisian cuisine, adding richness of flavor and texture to many dishes. It provides instant refreshment and is frequently used as a dessert after hearty meals. Melons are also frequently served fresh, sliced into wedges. Grapes are popular fruit in Tunisia as well. Besides being consumed fresh, grapes are often used to prepare fruit salads. Varieties of grapes include black and white grapes, each with its own flavor profile. Fruit is often served either on its own or as an ingredient in fruit salads, where it is combined with other fruits like oranges, apples, and pears. By adding a fresh fruity touch after meals, Tunisians emphasize their love for fresh and seasonal ingredients. These desserts provide not only natural sweetness but also the refreshment that is particularly welcome on hot, tropical days in Tunisia.
